I think Dalton added deeper introspection to the character, and Craig really escalated the grit side of things. But I agree with you in the sense Connery and Moore are the two giants of the franchise. I can't ever see them being dethroned. I think they're genuinely great but seven films apiece really allowed them to put a stamp on the character and engrain them into the public consciousness.

I believe that there are actually only two sides to the Bond character: the sardonic brute and the ironic hedonist. Connery and Moore brought out those sides respectively.
Dalton definitely added the anger and the sadness - but to be fair, Moore brought those qualities, in very small doses, already (TSWLM - the moments when Anya asks him about his marriage and killing her lover; FYEO - the way Bond kicks the car over the edge).
And Craig, IMHO, took those elements and combined them. But again, the blunt instrument-part was ingrained in every Connery fight scene before.
However, I love all the Bond actors. It´s a very rare case (the only one?) in which every actor who played the main character was great. None was miscast. Sure, people loved or hated the one or the other - but that´s personal preference blinding them. No Bond film failed because of the main actor, and that´s a major accomplishment.

It's still Timothy Dalton for me, as he's the man I see when reading the books. Maybe because Moore was my first Bond, Connery was always an acquired taste for me. And I like Pierce, but he's probably my least favorite even though I think he gets a bad rap, especially on this site. Here's how I prefer to think of each actor:
Most charismatic -- Connery
Most athletic/physical -- Lazenby
Most comedic/wry -- Moore
Most literary/faithful to source -- Dalton
Most box office/cinematic -- Brosnan (each was first to crack $100M, was hugely popular back then)
Best actor -- Craig
