Interesting...why is this your favourite?
Several reasons. I love the Eco Hotel setting (although it was rather underused), and I like the different style that Amalric brought to the fight. We're used to seeing Bond face off against enemies that are more closely matched with him in terms of size, ability, etc., and Bond usually knows going in that he's in store for a challenge, even if he knows that he'll ultimately prevail. With Greene, he's a rather unsuspecting character in that one wouldn't expect much of a fight from him, but he sure does put up a very good fight.
I think that with Greene, we're seeing a man who knows that he's outmatched (that's my reading of it at least, as I can't imagine that he could possibly think that he is on an even playing ground with Bond in this are), but one that is very desperately trying to escape the situation (evident from the wild noises he's making as he swings the axe at Bond), and I find that more appealing than the usual types of fight scenes that we're used to seeing with the franchise.
I also love his taunting of Bond after they hear the gunshot. The one area that I will say I think that Forster dropped the ball on this film was with that particular event, though (not the fight between Bond and Greene, but between Camille and Medrano). I think that they should have left the shot of Camille holding the gun pointed at Medrano out of the film, and leading us to believe that either one of them could have met their demise in that room. That would have lent some tension to Greene's taunting that ultimately wasn't there. But, the execution of everything contained within the fight scene between Greene and Bond was terrific.

Not my favourite fight by a long shot, but I like your argument.
