Stepping across the crocodiles - no question.
2nd - skiing off a cliff and deploying a Union Jack parachute
3rd - driving a motorcycle off a cliff to catch up with a plummeting airplane.
Granted, the latter was spoiled by dodgy special effects, but the audacity of the concept deserves some credit.

When Roger Moore narrowly avoids Bibi's bedroom advances in For Your Eyes Only.
Seriously though - I vote for when Connery managed to bluff his way out of being sliced up by Goldfinger's laser. Ironically, this scene came on the heels of one of 007's worst escape attempts. Getting tricked by a giant mirror? Really? Somewhere out there, Blofeld's white cat is saying, "Been there, done that!"

The Dr. No passageway crawl. He uses brains -- bypassing the electrified gates -- and brawn to crawl through hellish conditions and finish the mission. Truly excellent.

I love them all, but #1 for me has to be the BD Jet escape in Octopussy. No matter how many times I see it, it never gets old seeing the hanger get blown to pieces as he flies narrowly through the doors.
#2 would be when Bond hijacks the C130 in The Living Daylights. I love when he fires the plane up and revs it over the wheel chocks.

The underwater-harpoon gun-barefoot water ski-steal Sanchez's seaplane with millions in cash from Licence to Kill. Never before or since has Bond been able to turn the odds from so bad with so many against him to so good without any gadgets and all due to his resourcefulness.

Sean : Laser scene in GF
George : the whole escape scene from Piz Gloria is near-perfect. His desperate look just before Tracy finds him at the ice-skating ring is truly emotional
Roger : the shoe-lace trick when climbing the Meteors in FYEO. Clever and tenseful scene. (honourable mention to the 2CV chase earlier in the film)
Tim : the barefoot chase in LTK
Daniel : hard to say as the only escape scenes I have in mind are in QoS. Let's say it is something to come

I think that split second in `The Living Daylights` after defeating Whitaker and that guard bursts in ready to shoot him... and Pushkin arrives just in time! The look on Bonds face is fear I've never seen before, he thought he was a gonner!!

I think that Bond's killing of Sanchez at the end of Licence to Kill could qualify as a great escape. Bond's just crashed over a cliff on the back of a tanker truck and is then unarmed and at the business end of a machete, yet manages to get away relatively unscathed.

FRWL- enticing Grant into opening the attaché case, thereby starting the fight on the train. Not an escape as such, but he is moments away from the start of a "slow and painful" death and talks his way out of it.

Dalton's escape from the WAVEKREST in LTK. It's just about the only time I can recall being nervous in a Bond movie, and not knowing how he was going to get out of it when they cut his oxygen tube and have him surrounded underwater.
Probably the most thrilling moment outside of jet packs & Lil Nellies, along with the fun gypsy camp fight in FRWL.

Bonds ski escape from Piz Gloria. No gadgets or witty quips, just a man against the odds. Brilliantly choreographed, photographed and scored.
And its literary counterpart is one of Flemings greatest passages.
