Why don't you watch the scene that follows ten seconds later, and you'll have your answer.
Basically Bond knows that Le Chiffre is well connected enough to know who Bond really is, so he is just giving Le Chiffre a name he already has, and is saying to him "Yes, I'm an undercover agent, and you're still going to play me anyway because you need the money"

You mean he doesn't want to give Le Chiffre the pleasure of identifying him.

Bond knows that Le Chiffre will already know his real identity because he's well-connected, so sees no use in perservering with a useless cover.You mean he doesn't want to give Le Chiffre the pleasure of identifying him.

In actual terms, it's meant to throw Le Chiffre off balance. It's also a nod to the fact Bond never seems to pay his disguise much importance.
