Is it White?
Gettler? (assuming he's still going to be in the finished film)
Mathis?
Some anonymous individual who could potentially return as a henchman for the next film?
None of the above? (eg. unseen sniper, car bomb, poisoning)
And does he die before or after Venice?

To answer another of your questions Simon Beavis (and this really isn't a huge spoiler), the character of Gettler has made it into the final shooting script, based on call sheets from filming in Venice. Suppose all we need to know now is the actor portraying him.

Who is White? The film's direct equivalent of the book's SMERSH assassin, or a larger villain? For that matter, who is Gettler?

Mr.White introduces Le Chiffre with Obanno. He tracks down Le Chiffre and kills him and Valenka during the carpet-beater scene.

Gettler is an assassin that works for Mr.White. He tracks down Bond and Vesper in Venice and the final fight in the sinking building takes place between him and Bond.
