In the video (foreign) not the video on GMTV:
Le Chiffre "Nice to see you Mr.Beech or is that Bond, I'm a little confused"
MrBond "Oh we wouldnt want that now would we"?
Why does Le Chiffre know 007 is using an alias?

Because Bond is given the alias Mr. Beech, but when he comes to sign in he uses his real name, because he doesn't like aliases

Is that what they've done? Classic. That's made my day. I was just reading one of the top 50 threads, and someone mentioned the way in LALD we're all screaming at Bond that he's in danger with Rosie, and then we discover that he knew all along and just didn't care. It's an oft-made complaint that real spies don't go around the world breaking their own cover, one I've made myself. While I don't overly care for the idea of explaining how Bond became Bond, this looks to be absolutely priceless. The reason he always says his name's Bond, James Bond, is because he just doesn't like using aliases. That's cool. And Craig's delivery here - 'Oh well, we wouldn't want that, would we?' - ie, 'I don't give a [censored], I'm James Bond' is just perfect for it.

Oh look, I've gone all fanboy. :)

Well it isn't that he doesn't care, it's because he realises that under the circumstances Le Chiffre would be able to find out his real name anyway, so if he pretends he is someone else suspicions will be raised more than necessary.

It also goes along with the book. In the book he's made right away, Mathis explains as much in the hotel room.

When Vesper complains about him using his name he explains that a last minute replacement player is extremely suspicious already. The little gag with Vesper about her codename is priceless.
