Why did Bond and Camille get attacked in the plane?
Why would anyone plan to attack them? It was a real loose end. How would the guy on the phone know to phone Greene.

They got attacked because they were going out to survey the Tiera Projects. Greene obviously didn't want anyone doing this because they would find he had restricted the water supply. The guy on the phone knew to call Greene's people because Greene had been there before and paid the guy off. He obviously wanted to know about anyone looking into the area, and as the terrain was too rough and too isolated to approach from the ground, air was the only real option. Hell, Bond knew the guy who going to sell them out ayway; he said as much when hey were on the runway.
It's not a loose end at all; rather, the film just assumes you're smart enough to work these things out on your own as opposed to having everything spelled out for you every fifteen minutes.
