
How did Le Chiffre know?

He must have known it beforehand...
I'm completely sure that there is nothing that would prove Mathis to be either good or evil as he is a perfect option for Bond 22/23

I fully believed Le Chiffre when he told Bond that Mathis was siding with him..

As for the tell, I assumed Vesper was the one to tell Le Chiffre, and that Mathis was only speaking loudly to further illustrate the bluff to the audience. The dialouge in that bit always seemed pretty expository, to me.

I believe that it was Vesper who told Le Chiffre that Bond knew about his tell, the following day.

Except being a traitor is become a part of the traditional Bond girl. Elektra King, Miranda Frost, Vesper Lynd etc.when Vesper is revealed as the traitor and not a traditional Bond girl.

Good point. I hadn't noticed how that seems to have become a P & W trademark. Though here they do get a pass.

Vesper would have also known about the device in Bond's arm after seeing the wire coming out of his arm in the defib scene in the car. So she could have told Le Chiffre about that as well.

That's what I thought. I figured Mathis was on the up-and-up, and Le Chiffre mentioned Mathis being a bad guy to throw Bond further from the idea that Vesper is the double.

If that is the case, why is he protecting her? He tortured her too. No I believe Mathis told Le Chiffre. Vesper was working for Le Chiffre's boss. Le Chiffre knew he had trouble coming up, so he bribed Mathis to work for him.
