Anyone else notice Blofeld's cat in YOLT, when the explosions start to go off it jumps out of it's skin!
But on another note, does anyone know why he has a cat anyway, I can't remember if it was in the novels, anyone?

I guess they gave him the cat so we could identify him as the same person in multiple films since his face is orginially hidden, plus it adds to the mysteriousness I suppose.

I agree with freemo. It adds to the myseriousness. It also just looks great, it defines intellect like Alex said.

They added the cat because cats are smarter (and all-around cooler) creatures than dogs, and stroking a cat while calmly sitting in a chair gives an aura of intelligence.

I'm sure they picked a white cat because a black one would remind people of witches and so forth (not to mention the shedding that comes with dark-furred cats, I have a black cat and it sheds like a snake), and any other color would be rather distracting.
